Columbus punches well above its weight, and the reason is roasting depth. Stauf's, Brioso, One Line, Crimson Cup and Florin all roast their own beans within the city rather than buying in, which is more in-house roasting than most cities this size carry.
The Short North has the highest concentration, and it's dense enough that One Line, Mission, Roaming Goat and Black Kahawa are all a short walk from each other along or just off High Street. German Village is the more pleasant walk and the better choice if you want pastry with the coffee: Stauf's and Pistacia Vera sit close enough to do both in one stop. Grandview, Victorian Village, Italian Village, Clintonville and the Near East Side all hold worthwhile single stops if you are already nearby rather than a reason to cross town on their own.

The Short North's strongest specialty option, roasting in the city and pouring with the care to match. Reviewers point specifically to the maple latte and a Kyoto-style cold brew, and to baristas who remember regulars' orders. Stauf's Coffee Roasters
German Village
The historic-neighbourhood anchor, roasting its own beans fresh each morning and one of the oldest names in Columbus coffee at over 30 years running. A La Marzocco machine and properly textured milk are exactly what reviewers describe, and the patio is the seat to ask for. Cosy in a way the industrial rooms elsewhere on this list are not.

Worth seeking out the source café rather than drinking it second-hand.

Crimson Cup
A larger local roaster whose beans you will find across Ohio, voted the city's top coffee shop as far back as 2007 at its long-running Clintonville location on the same street. Strictly speaking a pâtisserie rather than a coffee shop, and included because pairing it with Stauf's a few doors down is the best hour in German Village. No indoor seating: pastries in hand to the sidewalk tables. The pistachio macaron is the specific thing reviewers recommend first, and the room has run since 2004 without needing to change that.
